Coffee After Dinner: Antioquia's Coffee Culture at Casa Barco
Antioquia sits inside Colombia's coffee-growing axis, and the farm supplying our pour-over is a two-hour drive from the restaurant — close enough that the beans usually arrive within a week of roasting.
Why pour-over
We brew to order rather than keeping a pot warming, which matters more with single-origin beans than most people expect — coffee held on heat for even twenty minutes loses much of the brightness that makes a specific farm's beans worth naming.
Reading the label
If you ask, we'll tell you the vereda the current beans came from and roughly when they were picked — information a lot of coffee menus leave out, and one of the easiest ways to tell whether a restaurant's coffee program is more than decoration.
A quiet end to the meal
We don't rush dessert and coffee. The dock is at its best in the twenty minutes after sunset, when the last boats come in — a good reason to let a second cup happen.
